My #1 favourite is Deus Ex, no doubt about that. Amazing story, superb gameplay (you can play the way you want to), a lot of attention to details, great design and music, a lot of things to read, to find. Also it gives you a lot to think about, you have to make moral decisions and so on. A real masterpiece.

But I also love the Thief series, the Age of Empires games, Clive Barker's Undying, Wizardry 8, Arx Fatalis, Unreal Tournament, Heroes of M&M 3-4, Couunter Strike: Source, TES IV: Oblivion, F1 GP 3-4, Brothers in Arms series, Freespace 1-2, FEAR, Call of Cthulhu, to mention a few.
